Talent vs training

What is the extent to which people are valuable jobs because they have built up domain knowledge or have decided to specifically learn and focus on an area of interest (which could have been picked up by someone else) versus being talented? How does that trade off with someone with greater abilities/intelligence but less experience?

i.e. if I want to pay someone for a service, to what extent do I care that they have some quality that makes them better suited to the task than if a random person had been given the same training/experience?
