Mum’s Chocolate Cake

Ingredients

  • Cake
    • 275g caster sug
    • 175g soft marge
    • 3 eggs
    • 1 tsp vanilla essence
    • 175 g low fat yogurt
    • 225g SR flour
    • 50g cocoa powder
    • 1 tsp bicarb of soda
  • Icing
    • 50g marge
    • 50g cocoa powder
    • 3 Tablespoons milk
    • 350 g icing sugar
    • 12 walnut halves

      Method

  1. Preheat oven to 170 or gas 3. Grease a 23 cm spring form tin. Line base with greaseproof paper. Dust with flour.
  2. Beat eggs and sugar. Add vanilla and yoghurt.
  3. Sift in flour and cocoa powder and bicarb. Stir till combined.
  4. Spoon mixture into prep tin.
  5. Bake cake for 45 mins until skewer comes out clean.
  6. Put tin on wire rack cool for 5 mins. Turn cake onto rack and cool completely.
  7. For icing: melt marge in pan. Stir in cocoa. Heat gently till combined . Remove from heat.
  8. Stir in milk and icing sugar till smooth.
  9. Spread on cake. Decorate with walnuts.
